In my recent Coastal Clear Noodle Soup recipe, I used this Korean somen noodles, and thought they deserved a little spotlight of their own.

Korean Somen noodles, or “somyeon” (소면), are thin wheat noodles that play a humble yet beautiful role in Korean home cooking. Soft and delicate in texture, they are quick to cook and easy to love, whether served warm in a light, savoury broth or chilled with a spicy, tangy dressing.
There is something deeply comforting about somyeon. In dishes like Janchi Guksu (banquet noodles), they bring warmth and celebration, often served at weddings or birthdays to symbolise long life and happiness. In Bibim Guksu, they become something refreshing and bold, tossed with gochujang, vinegar, and sesame oil. It is perfect for hot days or when you crave something light yet flavourful.
In my kitchen, I often reach for somen when I want something that feels both light and satisfying. What I love most about Korean somen is how well they absorb light broths, turning a simple soup into something gently comforting.
I have written a brief summary of two common dishes made with somen noodles below.
🍜 Janchi Guksu (잔치국수)
Meaning: “Banquet noodles” traditionally served at celebrations like weddings and birthdays.
What it is:
A light, warm noodle soup made with thin wheat noodles (somen) in a clear, savoury broth (often anchovy-kelp based). It’s topped with simple ingredients like sliced egg, julienned vegetables (zucchini, carrot), seaweed, and scallions.
Taste:
Clean, comforting, and delicate. The broth is subtle but flavorful, and the noodles are soft and silky.
When it is eaten:
Served on special occasions, but also cherished as a simple everyday meal.
🌶 Bibim Guksu (비빔국수)
Meaning: “Mixed noodles”
What it is:
A cold noodle dish made with somen tossed in a bold, spicy, sweet, and tangy sauce (gochujang-based). It is often topped with fresh vegetables like cucumber and lettuce, kimchi, and a boiled egg.
Taste:
Spicy, tangy, a little sweet, and very refreshing, perfect for hot weather.
When it is eaten:
Commonly enjoyed in summer or anytime you are craving something light yet punchy in flavour.

What I love most about Korean somen noodles is their quiet flexibility, how they adapt to both warmth and spice, celebration and simplicity. Whether in a bowl of clear broth or coated in a bold sauce, they always bring comfort.
To me, somen is a reminder that even the most humble ingredients can carry joy, soft, nourishing, and quietly beautiful.
